Toulouse Sausage Earns Enhanced EU Geographical Indication Status

Toulouse, November 10, 2025 – In a boost for one of France's most iconic meat products, Toulouse sausage has been granted Enhanced Geographical Indication (EGI) status by the European Union. The new designation strengthens the existing protection for the sausage, which has held a Protected Geographical Indication (PGI) since 2009, by imposing stricter production rules and expanding the range of authorized ingredients.
Under the EGI rules, Toulouse sausage must now contain a minimum of 80% pork, with the remainder consisting of beef (up to 15%) and traditional seasonings including garlic, salt, and pepper. Producers are prohibited from using artificial preservatives or flavorings, and the sausage must be produced within the Occitanie region, covering the historic province of Toulouse and surrounding areas.
"This is a victory for our region's culinary heritage," said Jean Dubois, president of the Toulouse Sausage Producers' Association. "The enhanced status ensures that consumers around Europe are getting the authentic product that has been made here for over 200 years." The association reports that Toulouse sausage production contributes €120 million annually to the Occitanie region's economy, supporting over 1,800 jobs.
To celebrate the EGI designation, a week-long festival will be held in Toulouse in December 2025, featuring sausage-tasting events, cooking demonstrations by Michelin-starred chefs, and tours of traditional production facilities. EU officials estimate that the enhanced protection could increase exports of Toulouse sausage by 20% over the next three years, particularly to markets in Scandinavia and North America.
